Bircher Muesli with Apple & thyme butter

About the Recipe

I fell in love with Bircher muesli while working in a little cafe in Perth, WA. The creamy texture with the fresh fruity flavours plus the toppings made for a great little breakfast. You can make a big batch of this in advance so you can have a super tasty and quick breakfast throughout the week, it'll keep for about 5 days in the fridge.

Ingredients

Soaked oats


  • 250g Rolled oats

  • 250ml Milk of your choice

  • 125ml orange juice or juice of 1 orange

  • 25g sultanas

  • 1 granny smith apple grated

  • 2 tsps chia seeds


To Serve


  • Yoghurt

  • Apple thyme butter

  • Fresh apple thinly sliced

  • Toasted Pepitas & sunflower seeds

Preparation

  1. Place oats, sultanas and chia seeds into a large bowl.

  2. Pour over the orange juice and milk then mix well.

  3. Grate the granny smith (don't worry about peeling) avoiding the core then add to the bowl mix again,

  4. Put into an airtight container, press down with a spoon to remove any air bubbles, then refrigerate overnight


To Serve


  1. Take the oats out of the fridge and mix, scoop enough out for breakfast (around 100g -150g)

  2. Dollop a good spoonful of natural yoghurt on top

  3. Add a tsp of apple & thyme butter ( add more or less depending on how sweet you like it)

  4. Add the thinly sliced granny smith apple and sprinkle with toasted seeds

  5. Enjoy straight away


Top tip


If youd like a more uniform sweetness from the apple and thyme butter just mix it through the yoghurt first this will ensure the flavour is more consistent throughout eating.
