This Beetroot dip, is super easy to make and you'll have it on the table within 5 - 10 minutes. It can also be made in advance allowing the flavours to build and meld together.
Beetroot, dill and horseradish are a match made in heaven, add the creamy notes of cream cheese and cottage cheese and by golly you're onto a winner.
Not only is this dip, dill-iscious 🙈 Its pretty versatile too, add it to a bagel with smoked salmon and capers or on the base of a serving platter with flaked roast salmon and thinly shaved fennel for quite the lunch time treat!
Ingredients
- 125g Cream cheese ( at room temp)
- 100g Cottage cheese
- 50g Mayonnaise
- 1 small clove garlic grated
- 2 tsp Horseradish cream
- 5g dill with from kept to one side to garnish (one pack from the supermarket)
- 2 tbsp Beetroot relish
- Salt and pepper to taste
Directions
- In a bowl, mix the cream cheese with mayonnaise until smooth
- Mix through cottage cheese, horseradish and garlic.
- Add dill and beetroot relish and gently fold till fully mixed
- Adjust seasoning to taste
- Serve and garnish with fresh dill sprigs
